These easy to make fritters are a perfect lunch recipe or simply add an egg on top and viola, you have a cafe worthy brunch option without leaving the house.

Makes 12 patties
Cooking time 15 minutes
Ingredients
400 g canned sweetcorn (or three cobs of fresh corn - kernels removed)
150 g grated sweet potato
1 cup (250 g) of wholemeal plain flour
1 teaspoon of baking powder
1 egg
½ teaspoon crushed garlic
1 cup (35 g) of spinach chopped
25 g feta cheese grated
3 tablespoons of olive oil
Method
- In a large bowl, combine flour, baking powder, grated sweet potato, corn, garlic and egg. Stir thoroughly until combined.
- Add the chopped spinach and feta and stir through the mix.
- Heat a frying pan with a tablespoon of olive oil on medium heat
- Add a heaped tablespoon of the mixture into the pan. Cook for 3 minutes, turning the patty over to cook for another 2 minutes.
Cooks notes
We served the patties with a simple spinach salad with some homemade relish. Natural Greek Yoghurt is also delicious with a squeeze of lemon juice or finely chopped mint.
